The mac.pan Pre-Fermentation Chamber is a compact and highly efficient dough resting and pre-proofing system designed to automate the critical resting phase between dough cutting and shaping. By eliminating the need for manual resting on worktables, this machine significantly improves production efficiency, consistency, and workflow organization in professional bakeries.

Thanks to its extremely compact design, the pre-fermentation chamber requires considerably less space than traditional resting tables while delivering precise and repeatable dough resting times. The number of resting nests is calculated according to production speed and desired resting time, with a maximum resting duration of up to 15 minutes.
